Tired of spending hours in the kitchen to make the perfect bone? Then the pressure cooker is exactly what you need. A pressure cooker can get your bone broth ready in just 3 hours. You heard that right!
The shortest cooking time for bone broth is around 8 hours and that is only when you’re using fish bones. Chicken and beef bones require a longer cooking time if you really want to draw the nutrients out of the bones. You can spend about one to two days cooking your bone broth if you go for these bones.
With a pressure cooker, you can cook broth for about 3 hours regardless of the kind of bones you go for. You will spend a lesser time if you’re cooking fish bones.
What is a Pressure Cooker?
A pressure cooker cooks food 70 percent faster than any other cooker, be it a stockpot or slow cooker. There are so many benefits to using a pressure cooker but I’m sure you will want to know what it is first.
For those that don’t know, a pressure cooker makes use of pressure and heat to cook food. The result is faster cooking time and a richer flavor.
The water inside the pressure cooker forms steam, which raises the pressure in the pot. High pressure raises the boiling point of the water in the pot making the food to cook faster.
It also forces water and moisture into the food. This makes tough foods get tender really quickly and also help them cook faster.
Cooking with a pressure cooker can be a little tricky. The pressure cooker works differently from your stovetop and there are several precautions to take when cooking with one.
Pressure Cooker Basics
If you plan on using a pressure cooker, there are several things you need to do before you start cooking, while you’re cooking and after you’re done cooking. The do’s and don’ts of using pressure cookers are very important.
They would mean the difference between cooking your bone broth right and staying safe while using the pressure cooker.
1. Read the Instruction Manual
There are different manufacturers of pressure cookers out there and their products come with unique features that should make them stand out in the market. It is important that you read the manufacturer’s instructions on how to you use the pressure cooker before using.
Also, get familiar with the features of the cooker before cooking. The steam-release valve and the display buttons are two important features that you should know before you start cooking.
2. Add Enough Water
Water is very important. Without it, a pressure cooker cannot build pressure and cook the food properly. There is a rule for adding water when using the pressure cooker. Normally, you’re to add at least a 2cm layer of water, however, you will have to add more when making bone broth.
Adding more water when making bone broth is great but you won’t end up with a concentrated broth. Adding enough water is an easy way to make a lot of broth in just one cooking time as it takes a lot of time to make broth. Since you’re using the pressure cooker, you can add as much water as you like.
You can add water till all the ingredients are completely submerged or just enough (but should be more than one cup) to make sure your bone broth is highly concentrated when ready. Whichever option you go with, ensure that the water is enough or your bone broth wouldn’t be well cooked.
How to Release Pressure From The Cooker
The pressure cooker uses high pressure to cook food faster. This high pressure is the cause of safety concerns among people who have never used a pressure cooker before.
While modern pressure cookers make it difficult to open the cooker while cooking, it is best you know how to release pressure from the cooker before using one.
The easiest way to release pressure from the pressure cooker is to let to allow the cooker to do it by itself. The pressure valve will drop once the cooker has been depressurized.
You should open pot only after it drops completely. You can wait for a bit longer just to make sure the pressure is completely gone.
How to Make Bone Broth In Pressure Cooker
Pressure cooker bone broth is really easy to make. This recipe can be used to make chicken bone broth or beef bone broth. The cooking time is usually the same. However, if you’re using fish bones, then you should cook between 30 minutes to 1 hour.
You can also mix the bones (chicken and beef bones together). The number of bones you use will depend on the size of the pot. Remember, you’ll have to add your herbs, spices, and vegetables. If you’re using a lot of ingredients, then you will need a large pot.
The more ingredients you add, the more water you should add. However, do not go below the minimum water level or above the maximum water level. Adding a small amount of water will give you a highly concentrated broth.
- Chicken bones (wings, legs, and feet)
- Beef bones (marrow bones, oxtails, and short rib)
- Onions (roughly chopped)
- Carrots (roughly chopped)
- Celery (roughly chopped)
- Black peppercorns
- Thyme sprigs
- Bay leaf
- Apple cider vinegar
Before cooking, you can roast the bones to boost the flavor of the broth. Roasting is pretty simple. You can roast the bones in the oven at 400F for 10 minutes. Turn the bones over and roast the other side for another 10 minutes.
- Place the bones in the cooker and add water. Add your apple cider vinegar and let it sit for 10 minutes. The apple cider vinegar helps to draw out nutrients from the bone.
- Add the other ingredients and lock the lid of the pot. Set the timer to 3 hours and let it cook at high pressure. The longer you cook the broth, the more nutritious it is. However, cooking for 3 hours is just good enough.
- When done, let the cooker depressurize naturally. Pour the broth through a strainer and separate the solids from the liquid.
- Pour the liquid (broth) into mason jars and then place them in the fridge or freezer for storage. Broth can last for about 5 days in the fridge and 3 months in the freezer.
For this recipe, we didn’t blanch the bones but you can go ahead and blanch yours. Always blanch the bones before roasting.
Precautions When Using the Pressure Cooker
The pressure cooker cooks fast by raising the boiling point of water due to the high pressure inside the pot. This can make the pot really hot and dangerous if not handled properly.
Here are some precautions to take when cooking with a pressure cooker. These precautions will help you cook properly and make it safer to cook with a pressure cooker.
1. Don’t Open the Pressure Cooker While Cooking
It is important for the pressure cooker to maintain the high pressure within the pot while cooking. This is why you shouldn’t attempt to open it while cooking.
Modern pressure cookers have features that make it impossible for someone to open them during the cooking process. However, if you ever need to open the cooker while you’re cooking, you should turn it off first and release the pressure that has built up inside before opening.
2. Careful With the Water
Adding water is important as it helps build the pressure within the cooker. However, you shouldn’t fill your cooker all the way. There is a max level for water inside the cooker.
No matter the number of ingredients (bones, spices, herbs, and vegetables) you put in the pot, the water you add should never cross this level.
Too much water in the cooker might clog the steam release valve. It could also cause the cooker to develop too much pressure which will not result in a well-cooked broth.
Benefits of Cooking with a Pressure Cooker
Boosts the Taste and Flavor of Food
Using a pressure cooker can boost the taste and flavor of your food. It can also do the same to your bone broth. Using a pressure cooker means you’re cooking for a lesser time. This is great for your broth as foods cooked in a shorter period of time are less likely to lose their flavor.
This means you can end up with a delicious tasting bone broth even if you don’t blanch and roast the bones before cooking.
Pressure cookers are said to cook foods 70 percent faster than other cooking methods. This means you’ll only spend about 3 hours making a bone broth that should take about 24 hours or more with other cooking methods.
Using fish bones should take between 30 minutes to 1 hour and you’re done. The shorter cooking time makes it more convenient to prepare bone broth at home.
Cooking bone broth with a slow cooker or any other cooking method that requires more than 24 hours of slow simmering can add significantly to your energy bills.
A pressure cooker can cook your meals in a shorter time which saves energy and reduces your monthly energy bills.
Things to Consider When Buying A Pressure Cooker
Pressure cookers come in different sizes. The size you go for should depend on the number of people you’re cooking for or the amount of bone broth you want to make. 6 and 8 quarts models are the most common sizes.
If you’re using a lot of bones or mixing bones (chicken and beef bones), then you should go for a 6-quart pressure cooker. Otherwise, you can go for smaller sizes.
But if you want to use your pressure cooker for more than making bone broth, then you should consider the number of mouths you’re going to feed.
If you plan on using the pressure cooker very often, then you should go for one that is durable. Stainless steel models are usually more durable than other models.
Availability of Replacement Parts
You will definitely need to change some parts of the pressure cooker as you use it. This is why you have to consider the availability of replacement parts before buying. Some pressure cookers have their replacement parts readily available but very expensive to buy.
Go for a pressure cooker that its replacement parts are reasonably priced and readily available.
Most pressure cookers have features like timers, high and low settings, lid lock indicator, pressure indicator, steam release valve, steam release, gasket, and water levels. But some pressure cookers come with more features.
Always check out the features of the pressure cooker before purchasing. Ensure that the pressure cooker you’re going for has all the features stated above before going ahead to purchase it.
The price of a pressure cooker surely depends on its features and size. An aluminum pressure cooker will cost less but won’t last really long. Pressure cooker usually cost between $30 and $300, however, being expensive doesn’t necessarily mean it will serve you well enough.
Depending on your budget and the reason you need the pressure cooker, you should be able to get one that will serve you well enough.
